The Crown Room is the most beautiful place in the hotel (in my opinion) and they do a Sunday brunch for about $98 per person. If making a memory is the reason to eat at the Hotel del, this is a good option.
However, the 1500 (that is the name of the restaurant) has a nice 3-course pairing for about $80 pp. But a nice alternative is the Shearwater; is a really nice but more informal dining experience.
It will depend on your budget, your preferences, and your mood. There are also informal grill/bar choices, too.
Check out the 3-course option at the 1500 restaurant. It seems to be the easiest on the budget while still offering a first class experience. They offer a wine pairing for $55 pp.

If you are more flexible, the Brigantine Restaurant is just about across the street and has a reputation for serving excellent seafood.
There is also a very attractive restaurant in the marina (again, very near the Hotel del) which has great water views and a nice menu. The name escapes me at the present but it is easy to find; it looks like a little Hotel del Coronado.
I envy you, getting to spend some time on the wonderful little Island of Coronado. Enjoy every minute!
