There was always a staff person on site when we were there last September. There were males and females - all were very nice and helpful, and for us it was nice to know a staff person was always available. The maids were female, and I only saw a female cooking. I doubt anyone on a roof terrace is free from determined efforts by anyone to see anyone in Fez, but the roof terrace seemed private enough. While not as pronounced as in India, it seems as if everyone watches everyone, everywhere, even if they are hiding. Also, anyone staying in the Riad is free to use the terrace, so I don't see how you can be assured of absolute privacy, unless you stay in your room with the doors and windows shut. Don't know about the Halal food. We only ate the breakfast which was primarily breads and jellies and butter and sometimes eggs, along with orange juice, tea/coffee. We were never offered alcohol with our breakfast, but there were lots of carbohydrates. The staff was very accommodating and would probably bend over backwards for reasonable requests. Also, the riad is a very short walk to the medina where you will find halal food. If you speak some french, it helps, but it is not necessary. The riad will arrange a ride to their place if you call or email and request in advance. But It's cheaper by taxi and those taxi drivers seem to be able to take you anywhere, even if they have to ask someone. At the time we checked out, we paid exactly what we were told we would be paying when I made the reservations. No surprises.
