The rooms were decent for Rome and the breakfast was decent, however, should you ask for a recommendation for a place to eat, they will give you a touristy place. Please look into it for yourself.

1) Hop on - Hop off bus (one day, two days, three days tickets)
2) Tickets for the entrance to Colosseum and Vatican Museums
3) Tickets for other kinds of tours inside and outside Rome.

Not sure about currency question. Yes do day tours-Contact Walk with Pete on Facebook. He is fabulous. I did not travel with my kids.... rooms are smaller in Europe than the US so you may need two rooms.
