I don't know which Big Creek Lodge you are referring to, because I work here right now and it is nothing like you wrote!
All the food we prepare for the guests is more than perfect (and believe me I'm really strict considering food!) There has never been food that is off! Every vegetable and every fruit is washed by me (if you didn't do it that is your mistake and really disgusting!)
If you don't like prefabricated dressings you could have done a fresh one (like I'm doing it) any time you wanted.
Your job was to clean the rooms so when they were not clean it was your fault again! The same goes for the cleaning basket - your job and your responsibility.
Now to the activities:
During my stay the guests went on mountain biking, fishing and riding. The cattle drive is once a year so when guests are staying during that time they can participate. For what I know you went on two trail rides, which, at least in my eyes, doesn't make you an expert in the trail rides here. There are a lot of different possibilities here to go on beautiful and also fast trail rides.
As a result I can say: I don't know on which ranch you stayed but it was definitely not the Big Creek Lodge I'm staying right now.
