Yes, you would like to stay Dracula style when you go to Transylvania. This is the place. And even if Turda doesn’t have a castle it is a great town to sample Romanian country life. Just go uphill and enjoy.

There are suites with multiple rooms (and beds) - although they won't be completely separated and would have common bathroom. My sister and her family had one of those, at the top of the tower. There were two rooms (both with skylight actually) and one bathroom and you came through one front door.
I don't know about room service, you can give them a call to ask or email them. But I thought the service at the table was quite good and better than in many other places - and the food was GOOD. Wish you an enjoyable stay if you go. I for one had fun.
