Ask any Spaniard what is the best foodie city in the country, and most will tell you, without any hesitation, San Sebastian. This seaside city in Spanish Basque Country has become renowned as an epicenter for culinary innovation. In fact, some of the world's greatest dining options are now packed into "Donostia," as San Sebastian is known in the regional language of Basque. Here you'll find restaurants filled with highly original options and decor that is elegant without being pompous, plus chefs who are taking the art of cooking a simple meal to extremes never before attempted (would you like that steak served on an iPad, sir?).   • You'll be expected to dress with a certain decorum at many restaurants in San Sebastian. Even on the hottest days, avoid shorts or t-shirts and go for a more business casual look.
  • Make reservations at popular restaurants well before your trip to San Sebastian. Some eateries are world famous and, as such, can require reservations months in advance.
  • The best way to experience a restaurant's oeuvre is to try a "menu de gustacion," or tasting menu. You'll get a full-course meal well worth the often hefty price tag.
  • As has already been well documented, Spanish eating customs are rather different from the rest of the world. Expect to have lunch around 3pm. and start dinner around 10pm.
  • Getting to some of the restaurants in this guide can be difficult via public transportation, so renting a car will be worth your money.

    Frequently rated one of the best restaurants in the world, Arzak is a culinary delight that should be experienced by any food fan. The service is impeccable — formal without pretension, elegant without snobbery — and the ambiance, when I was there, was one of sleek sophistication: black walls offset by colorful flowers and shiny silverware. The food, naturally, is the highlight — creative appetizers both delicious and surreal in design, succulent steak courses served on electronic tablets (seriously), and a dessert course of black truffle so good it makes one pause for a moment of self-reflection. Arzak was everything its legions of fans across the world have touted it to be: adventurous, dangerous, innovative, focused, and transcendent.

    Mugaritz is fine dining set in a naturalist's paradise. Located in the hills to the south of San Sebastian, this famous restaurant is in amongst these mountains, settled between a grove of oak trees. Inside, this Michelin-starred masterpiece serves food that will astound and amaze both the eyes and the taste buds.

    For stunning ocean views paired with incredible food, few places are more apt than Restaurante Aklare in western San Sebastian. Nestled in the foothills behind Monte Igueldo, Aklare has been serving up a first-class dining experience (often worth three Michelin stars) since 1974. The dishes, which often change, can include anything from fish to bacon to Spanish 'polvorones' (crumbly pastries.)

    High among the all-stars of San Sebastian's culinary scene is Restaurante Martin Berasategui. Named for the chef that created this incredible kitchen, the eatery is located 8km outside of city center, and, like other restaurants in this guide, it sits within the natural beauty of northern Spain.

    San Sebastian is known across Spain for having the country's very best pintxos, or large tapas. Particularly in the city's Parte Vieja neighborhood, restaurants are now serving up elegant and creative tapas that go perfectly with a glass of wine. At A Fuego Negro, diners can enjoy food in the style typical of a pintxos bar, and they can order a variety of dishes a la carte.

    Next on the tour of Parte Vieja tapas is Ganbara, located on Calle San Jeronimo. It is almost always stuffed to the gills with a lively combination of tourists and locals, chiefly because it serves high-quality pintxos in a neighborhood rife with activity. Because of this, it can be quite a tight squeeze in here, but it is worth getting closer to fellow diners than you might like — particularly when you taste the jamon serrano coupled with a cold glass of beer. Perfect!

    Borda Berri holds its own among the greatest of Parte Vieja pintxos bars. Located on Calle Fermin Calbeton, this establishment is much more low key and laid back than its counterparts elsewhere in the neighborhood. Its best pintxos include beef cheeks and pork ears, plus the house special: risotto.

    Do not be deceived by Bar Nestor's underwhelming exterior — this Parte Vieja pintxos legend is worth your time. Come to its Rua Pescaderia location specifically for the chuleton (steak) served on a large tray with rock salt. Coupled with beer or a glass of wine, this is a perfect cosmopolitan, affordable, and relaxed dinner.

    Nestled in the vertiginous hilly countryside outside of San Sebastian, Asador Etxebarri takes some finding. Here, new wave chef Victor Arguinzoniz is using old methods to make some of the finest grilled food imaginable. Everything (and I do mean everything) on the menu is in some way prepared in his elaborate grill. A delicious treat.
