what is the easiest way to get here from Dublin without renting a car? (bus or train availability?)

Bus and trains depart from Dublin to killenny on a regular basis from Dublin City Centre. You can check this online at buseireann or iarnroid eireann. I hope this helps.

I went by bus! Around 2 hours, the bus costs around 6€ and you can get easy in burgh quay (front of the immigation office).
