It is vast with lots of history, architecture, and culture. I would actually opt for a tour guide for this city, as there is just so much going on. Wear comfortable shoes and pack your patience! Pull up a stool and watch the locals shopping and hanging out. Easy place to get into conversations with people. We had something hot to drink and dessert at a cafe and that was nice. The servers were very pleasant. There are interesting things for sale but you will be expected to bargain. You will be constantly hassled but best to avoid replying in a polite way. I noticed some antiquity shops with "certificates" of authenticity for the items. You would be brave to purchase here. We found this online and didnt have a reservation. After searching for it on google maps (and asking the coffee shop), we managed to get a table as it was early evening.
The cocktail list itself is great but limited - i asked for a cocktail based on a few ingredients and the waiters were able to make me a lovely cocktail.

Our tour guide made the tour special! His knowledge of the Old and New Testament made the landscape come alive. His attention to detail made our stay in Israel flawless. He was constantly ensuring our questions were answered and our needs met. - Ian MGran Canaria, Spain33 contributionsWe had two days in Israel. The first we docked in Ashdod and went to Masada and the Dead Sea. Masada itself was a pleasant surprise, it was at least as impressive as Egypt and Jordan that we had just visited. The Dead Sea was an experience and something that can now be crossed off the bucket list. Day two we were docked in Haifa and went to Jerusalem. The journey itself although not long took a fair amount of time due to the traffic but our guide rearranged the order so that we could see everything. We did indeed see everything on the list and it didn't feel rushed at all.
We were lucky enough to have Ryan as our guide on both days and I would highly recommend him. He has a lot of knowledge but doesn't go into too much detail.
