I did tour skiing during the winter and mountain biking this June. Nature is super nice, roads and paths in very good condition, Ucia Fanes (good food, nice variety of grappa) and Ucia Lavarella are good places to eat and get some good beer (Lavarella supposed to be the highest brewery in Europe, 2050 m).

Hikes from Pederu offer everything you are looking for at the mountains, beautiful lakes on Fanes side are worth visiting and the hikes are not that crowded as many others in Dolomites even on busy days. My only reservation is the local transport. You can easily hike to Lago di Braies or to Badia in a day, but there are very limited possibilities to get back to Pederu by public transport, so usually you have to take the same way back to your car.
