We did the observation deck, gift shop and ate ice cream all in about 45 mins.
Enjoyed seeing how the ice cream is packaged from the deck.
BTW there is no longer a guided tour of the facility.

The Creamery has a museum with videos and photos of Blue Bell history. There is a viewing area where you can watch the ice cream making process. And, then you can visit the ice cream counter and try the finished product.

They do not do guided tours. The observation deck is available for viewing production and packaging most weekdays from 8am to 2 pm. There is an employee there who will answer questions and give information about the production process. The attached ice creams parlor is open M-F 8am to 5 pm.
