Well, I didn't skate, but my son and husband did. They had a wonderful time. The area is so clean and well maintained. When I visit Phoenix for any reason, I love staying at Palomar Hotel and walking this area.
There is very little shopping in downtown Phoenix. This new area had hotel, restaurants, big fitness center, Urban Outfitters, pizza, ice cream, CVS and a few more stores. Whatever you need, you can find it here, It's about 3 blocks from the convention center.

Yes it is walkable - there are a number of options. Squid Ink is sushi. I won't say it is fantastic (this is the desert) but it is solid and they have non-sushi items too. The Arrogant Butcher is good if the weather is nice you would also have the option of sitting on the patio there (at multiple places actually) which is nice for a "solo" lunch as you can people watch. The Strand is Italian and though I have not been there it is a popular spot for people from the office so I assume it is solid. The Tilted Kilt is basically an "upscale hooters". All of these are sit down. If you need a quick bite more "fast" there is Potbelly which is sandwiches. If the weather is nice the other great option would be "The Breakfast Club" which has nice outdoor eating (they server lunch too). It is on the second level courtyard between the office building and the Palomar. Just take the escalator or stairs up from First street. That or the Arrogant Butcher would likely be my top two unless you really like Sushi (Squid ink is a nice "modern" vibe).
