As ctbpny said, your chances of seeing a Jaguar are about one in a million. The cats will see you but you will likely only come across their footprints in the mud. Your best chance of spotting one is in the very early morning, before or shortly after sunrise.
The hiking in the park is quite beautiful and there are different intensities of hiking but depending on mobility issues, the more exciting hikes that lead to the waterfalls and stunning views are much more strenuous. If your 12yo and 13yo are active then the park will be great for them.
If you decide to go tubing in the river just be aware that there are some steps to walk down with the tube (re: mobility issues). The steps are wide but I don't recall seeing a railing...
It does get quite hot while in the park and some of the hikes do not have much tree coverage so it's best to start as early as possible. By 10:30am you will already feel the heat - just something to keep in mind if it takes a few hours to get to Cockscomb from the port. Also, you will need to bring your own water, snacks and lunches as there is no where to purchase these items in the park.
