I welcome you to a half day, hands on cooking class where we will create a beautiful Italian meal in the hart of Tuscany! In my house or yours. Our delicious menu will consist of 4 courses, with plenty of red wine. The menu is subject to change with the seasons and what is fresh daily. An EXAMPLE of what we will cook is an Antipasto platter, Hand-made pici pasta with a Tuscan ragu, Sliced Chianina beef with fresh green & red pepper corns, arugula, tomatoes, & parmesan shavings & Panna cotta with a mixed berry sauce!! Plus Italian coffee and some of my very own Lemoncello!! You will receive an apron (you can keep), recipes, and all the knowledge needed to recreate what you learned, when you get back home!! All dietary needs are welcome! Classes are from 2-12 people, lunch or dinner, around 3.5 hours long plus how long it takes to sit and enjoy the meal. For more than just a 2 days cooking class, there is a 10% discount!!

Hand Made Pasta Rocks!

We've had an unused pasta maker in our cupboard for 30+ years - it's STILL unused! Chef had us making 3 different pastas all by hand. We were on video chat from CA with 3 other couples. It was a recipe for confusion but Chef Ryan and Deborah kept us all on track to make 3 fabulous dishes!

We had Orecchiette with sausage and broccolini in Bari on our last trip and now we can make it at home!

Very much looking forward to visiting Cortona and meeting Chef Ryan and Deborah on our next trip to Italy!

Highly recommended in person or on video!

Due to Covid our friends had to cancel a trip to Italy. We arranged a holiday gift of an online past-making class with Chef Ryan. We had a wonderful time with 4 households learning remotely and going through three types of pasta (both egg and eggless), three fantastic sauces and eating and enjoying wine between finalizing each one. Our friends were all amazed and thrilled to have made and eaten their own pastas from scratch and it was a wonderful and memorable experience for all involved!
I have never heard them honestly express such excitement over a holiday event! Looking forward to another class with another group of friends. An excellent holiday gift for those you want to be with but cannot.

Unforgettable! Molto buono!

My siblings, niece, and I enjoyed a 4+ hour cooking class with Chef Ryan last week, and I'm still reeling from all the incredible food we made/ate!! Never mind the wine... and limoncello... and desserts... just unbelievable. Ryan is so passionate about everything, it's contagious! And can make for a late supper!! But what is time, when you're in one of the most beautiful places in the world, in a phenomenally cozy-yet-functional kitchen, with the coolest dining space you could ever imagine.

If I ever make it back to Cortona, best believe I'll book more time with Chef Ryan (and another tour - or three - with his engaging and equally passionate wife, Debora)!! Thank you so much for a great last evening in Italy. It was a night - and a meal - I'll never forget!

Eight Cajuns Cooking Italian with Chef in Cortona, Italy! 😜

We were in Cortona on vacation with great friends and this could possibly be one of the best experiences of the trip! Chef Ryan and his wife Deborah were so kind and patient with this group of Cajun friends! He and Deborah welcomed us into their home and taught us how to make pasta and other true Tuscan dishes. He brought us into his garden to pick veggies for our dishes, truly farm to table! We all had a role in preparing the many dishes we had for lunch from the appetizers to the dessert. We truly had a blast…I highly recommend this if you are in Cortona, Italy!

Oh, and by the way, check out Deborah’s artwork, some of us purchased pieces from her, beautiful!

Amazing Experience!

What a wonderful experience cooking with Chef Ryan and his wife Debora! We laughed, we drank, we cooked, we ate. Chef Ryan welcomed us into his home, he tried to teach us to cook and put up with our lack of culinary skills with a smile on his face. We learned how to make pasta, a delicious duck ragu, appetizers and dessert. The cooking lesson was a highlight of our trip and I would recommend it.

Chef Ryan also came to our villa to cook dinner for us on our first night in Cortona. It was amazing and suggest you book him early as he is in high demand.

I cannot express how wonderful this experience was. We were welcomed in to he and his family’s home and had the best time learning about the culture, the food and the joy that is Tuscan cooking.

I can not recommend this cooking class enough. Ryan was so enjoyable to be around. And the food was amazing! The experience of learning how to cook fresh pasta as well as amazing antipasto dishes was such fun. One of my favorite days in Italy.

More Pichi Pasta Please!

Seriously a dream come true taking a cooking class in Italy and it could not have been better. We kept saying it was the best food we had had our whole trip and we got to make it. Ryan did amazing with our group of 8. He was thorough in his teachings and we are all convinced we will be able to replicate it when we get back home. I sure hope so! Loved every minute but hand rolling pichi pasta was my favorite!

Was this the best food we ate in Italy?! Quite possibly! We had 2 meals with Chef Ryan (one he prepared and one he taught us to prepare.) they were both so delicious. His cooking class was great and I can’t wait to make homemade noodles. He had a lot of patience for a kitchen full of amateurs. Debora and Ryan created a beautiful evening for us, opening their home. Would recommend in Tuscany!

We had a FANTASTIC evening with Chef Ryan and his charming wife Debora. Ryan gave a great overview of Tuscany from a nutritional and culinary perspective as well as a lot of insight on the local wine markets. This trip had been planned a year before before Covid and we have kept in touch to make sure our evening would be safe in terms of protocols. We were so glad it finally happened this month. Ryan and Debora have a beautiful home and a sustainable garden/farm/orchard. Everyone had a role in contributing to the dinner and plenty of wine was on hand during meal prep and obviously, the meal itself. It truly exceeded expectations which as we all know, doesn't happen often. If you're pondering a trip to Cortona, this is a MUST!
