The Best Introduction to Palermo Is Through the Stomach

To me the best part of traveling is learning about local cuisine. Vincenzo guided me around the bustling Capo market where I learned about what’s fresh and what’s best and how I might prepare them. Then we went to his restaurant CinCin and cooked up a storm in his kitchen. It was all hands on. I perfected my knife technique and how to handle a saucepan. It was 100 percent terrific including the delicious results.

Fantastic informative day

I had a fantastic day exploring the markets with Vincenzo and then cooking delicious eggplant, pasta with Sicilian pesto and capone fish with saffron, tomato and mint. I learnt lots and had fun too! A very memorable day-thank you!

Great fun!

Vincenzo was very personable and spoke perfect English. The whole experience was great. We went to the market and tasted local "street food" and he explained what some of local foods were . We purchased the ingredients for our lunch. Then back to his restaurant to prepare the food which with his guidance.We had a a very tasty and five course lunch with wine. What could be better! No dinner that night!

Highlight of our trip to Palermo!

What a fun experience and definitely a must do when visiting Palermo! Vincenzo was so engaging and fun as he showed us through the market! He even got my mom to step out of her comfort zone to try some adventurous foods! He deserves an award for that! He had a set menu for the cooking class portion of the excursion, however we got to help pick items at the market that he incorporated into our menu based on our likes, which was so fun!
My parents and I love to cook and know our way around a kitchen so we were a little worried before the class that it may be too "entry level" but Vincenzo did a great job of gauging our experience level and geared the class in a way that fit us! He taught us new techniques, the food and wine was amazing and loved seeing Mamma and his daughter in the kitchen as well! It was truly a highlight of our trip and created memories that will last a lifetime. I will definitely do this again when I go back to Palermo!

We met Vincenzo at the Market del Capo. The time spent at the market would have made an excellent tour on its own, but afterwards we also prepared an splendid meal for ourselves, using the ingredients we sourced at the market. All this with some really useful cooking lessons. Afterwards, Vincenzo shared his recipes with us. A day to remember.

A memorable experience

My family (all adults) and I recently had an excellent time in Vincenzo's cooking class. The food was delicious and the activity helped get everyone working together. It was a great bonding experience.

The class began in the local market which was quite an experience. We collected most of the ingredients for our meal at the market, but Vincenzo also gave us some very helpful tips on market etiquette, signs of quality seafood and tips for the best shops in the market. This information proved valuable for the rest of our time in Palermo.

Once we got to the kitchen Vincenzo would direct us to different tasks, some in which we'd take turns and others we'd work independently. Vincenzo kept everyone engaged and having fun while still making sure we completed each task safely and efficiently. We prepared four dishes so there was quite a bit of work to do.

At the end we all shared a delicious meal and some lovely wine. Vincenzo shared some interesting stories about Palermo and we all had a very nice time talking with him. Everyone agrees that if we find ourselves in Palermo again, visiting Vincenzo for another class is a must-do.

A Perfect 'FIVE'!

Our last day in Sicily was a real treat because we spent it with Vincenzo in the marketplace and in his restaurant's kitchen. Vincenzo is a working chef and his class is the real deal. After a delicious walk through the market area of Palermo, we headed over to his restaurant Cin Cin and began the class. It was a real learning experience and great fun at the same time. The meal we prepared was probably by his standards pretty straight forward but for us it was pushing us to the edge of our abilities. It is a fine line, but Vincenzo navigated it perfectly. We prepared a delicious sauce made with all fresh ingredients, prepared and deep fried a lovely eggplant, made a pasta and prepared and grilled some fresh fish from the market that morning. Be prepared to take a LOT of pictures because you will move fast in the kitchen under his direction. We have already tried to re-create some of the dishes at home (good, but not as good as in Sicily ... YET), but the only way to re-create the delightful company of Vincenzo and his sweetheart mom is to go to Palermo and experience it firsthand. Wish we were there now!

In my visit to Palermo this was one of the highlights of the trip which is a big statement given all the history and culture on show.
We met Vincenzo and started with a coffee and had an explore of a local market. He was very helpful explaining about the produce and the local fruit and vegetables. We were treated to more drinks and street food while in the market. He helped us select the best fruit, vegetables and fish for our cooking later. After a good explore of the market we were taken by taxi to Vincenzo's restaurant.
While there we cooked a variety of traditional Sicilian recipes. Enough to feed an army! Vincenzo is an excellent and friendly chef and explains what to do in a helpful way. He helped us make all the dishes and included some fresh pasta. We learnt some good tips for our cooking back home. it was a great experience in cooking in a proper restaurant kitchen.
We then enjoyed the meal that we made. Id like to think we done as good job as even Vincenzo cleared his plate!
We were treated to wine with our meal and a good talk with Vincenzo.
We then given the gift of our apron to take home as a memento.
This is a great and highly recommended experience. The market you gain some insights into local food culture and it is excellent leaving with a full stomach and an enriched culinary experience.

Not to be missed!

Our family of 4 with daughters aged 22/24 started our Sicilian vacation with this experience. And what an experience it was!!! Vincenzo is a native Sicilian who spent his formative years in the US. so therefore, he was perfectly suited to point out the familiar and unfamiliar to us and he was easy to understand and talk to!!

The tour of the food market was incredible and informative - and delicious. We sampled indigenous delicacies along the way and had a hand in selecting food for our cooking “class.” My daughters absolutely loved this.

The cooking class at the restaurant was amazing. Vincenzo taught us the art of using only a few local and familiar ingredients to create delicious recipes. He insisted that we all try our hand, especially with the pasta making - which can easily be replicated back home. He is a great teacher and kept us busy.

We ended the tour with a family style lunch - including delicious wines and fun conversation. I can not recommend this experience enough!!! Bravo Vincenzo!!

Shopping and Cooking with a Sicilian Chef

My husband arranged for us to take this market tour and cooking lesson with Vincenzo on our April trip to Palermo. We expected that there might be a few other couples or a family taking the tour as well. We were surprised to find that the tour was going to be just the two of us with him. He explained that he tries to keep the classes small - a family group of no more than 8 or so, or individual couples. This personalized approach made the tour and lessons very immersive and informative.

We started with a tour of the Capo Market to get our ingredients. Everyone at the market knows Vincenzo, so hugs and shout-outs abounded as he weaved us through the cobblestone alleyways to the best purveyors. He made sure that we tasted all of the best that the market had to offer, stopping at stalls along the way for snacks like Arancine, Panelle, Spleen (yes spleen and yes, you WILL eat it) and Fritulla (which I will tell you nothing more about as you have to experience it for yourself).

Once all our ingredients were collected, we cabbed back to his restaurant (Cin Cin) and prepared an amazing feast. We did all of the cooking under his instruction. My husband, who does not cook at all got terrific guidance as well as some gentle ribbing for his lack of skills. It was all in good fun and the end result was spectacular. The menu that we prepared included:

Pork with Artichokes and Onions
Pasta with Pistachio Pesto
Caponata
Casserole of zucchini, pumpkin and ricotta
Macerated Wild Strawberries

The three of us sat down and enjoyed our lunch with a bottle of wine and some great conversation with Vincenzo. It was a phenomenal experience from start to finish.
