We loved cooking with Esperanza. She is so helpful and patient. She accommodated the various needs of our group, including having one vegetarian. The food was delicious!

A few months before our trip to Oaxaca, I contacted Augustin to book and create the menu for the cooking class.
On the day of the class, we met Esperanza in the Zócalo and walked to a nearby market to buy the ingredients. Afterwards, we took a short taxi ride to Augustin's house.
We made red salsa, guacamole, homemade tortillas, empanadas with quesillo and squash blossom flowers and 2 types of mole - negro and rojo. All of the food was delicious. The mole negro was the best mole I have ever had, and I have had a lot of mole! The recipes were printed, so that you could take notes during the class. Esperanza was an extremely patient teacher and Augustin was a great host and taught us a lot about Oaxaca and Mexico. His homemade mescal was delicious and beverages were complementary during the class. We highly recommend that you book this cooking class.
Muchas gracias, Augustin and Esperanza. This was one of the highlights of our trip to Oaxaca, Mexico and we look forward to making the mole at home for many years to come.

An incredible day with Esperanza and Augustin. They are beautiful people inside and out. Esperanza is this amazing teacher as she patiently explains and demonstrates all of the steps for creating delicious traditional dishes.
This is a must stop for persons who respect the culture and love the food in this city.

We had the most enjoyable and fun day on the cooking course with Esperanza and Agustin.
The booking process was easy and smooth and the meeting point in the zocalo really clear. Esperanza met us and we walked to the market to purchase some ingredients. She explained the ingredients and also gave us some choices of the things we could make.
Esperanza was extremely knowledgeable and such a lovely lady who was very patient and an excellent teacher!
We were provided with printed recipes and a pen so that we could add our own notes, which we loved. There was plenty of beer, water and mezcal to drink during the class. Agustin was an excellent DJ, keeping the tracks going whilst we were cooking :)
The great thing about this class is the size and how personal it was. We have been to other cooking classes where large numbers meant you only got to do a small part of a recipe each. This class was so hands on, we were able to do and try everything and learnt so much.
The food we made was so delicious - we left with very full stomachs and a huge smile.
Thank you Esperanza and Agustin x

Cooking with Esperanza and Augustin was the best part of our trip! The mole rojo and Chiles Relleno were out of this world and our family of four had way too much fun learning how to prepare the meal! We made homemade guacamole and salsa to start and our teenage boys could not say enough about the whole day. Augustin and Esperanza treat you like family! This is truly a do not miss amazing experience!!! 5 Stars!!!

We had an excellent day with Esperanza and Agustine. We began by meeting Esperanza at the market to buy ingredients, and then spent the entire day cooking tortillas, guacamole, red mole, chicken. We were absolutely stuffed full of food and Agustine provided great entertainment with food, beers and pouring shots of Mezcal. Esperanza is an extremely authentic and experienced cook, providing background knowledge on ingredients, technique and very patient with helping us make our own dishes. Highly recommend to do this with a fun group!

We took the class because Esperanza is a traditional cook but not a chef. And that's the real experience of cooking. Both, Augustine and Esperanza were very beautiful people, charming and talkative. They made us feel very welcome. Esperanza is one of the best cooks I have ever met because she learned cooking from the beginning of her childhood. Augustine is dj'ing and crazily pouring mezcal for us all the time. Overall, we are very happy about the whole experience. So were other guests, which you can tell by their writings on the wall.

We loved our day with Esperanza and Augustine. We started with a market visit and then travelled a short taxi ride to the home with the kitchen. We cooked many delicious things including mole. Was a fantastic authentic experience and I fully recommend! A must do in Oaxaca!

Forget about doing the overpriced foodie tours of the city. This is the real deal. The cook, Esperanza, takes a bus from her village to teach this class and it was incredible. We made the most delicious black mole (amongst many other dishes) that we have tasted on our whole trip to Mexico. The host, Agustin is an absolute character and offers infinite amounts of beer, mezcal or soda if you want to loosen up a bit. A fantastic experience.
Starts at 11AM and lasts until about 5 or 6pm.

Best cooking class with traditional cook and not a chef. WE HAD THE BEST TIME. Most incredible hosts and food. HIGHLY recommend.
Traditional food (the best black mole in mexico), music (Augustine is a lovely CRAZY man), beers (OPEN BAR), dancing and MEZCAL. What more could you want?

There is a direct link to e-mail for Augustin Canseco on the reviews for Cooking Classes Oaxaca. When I took the class a few months ago my e-mails to Augustin were answered promptly and all arrangements were made via e-mail. Just tried to access their website, but it seems to be down at the moment. Enjoy!

Hello Judytjet,
Actually , the chef I wrote about is Gerardo Aldeco Pinero in Oaxaca city.
TA rules won't allow me to post his direct contact info but do a Google for his name in Oaxaca . Good luck
