Wanted to get some good knives but places like Aritsugu is too touristy and overpriced. Did some research and found Hayakawa with good reviews. Abit of a walk from Nishiki market but worth the effort. Charming little shop and the owners are humble and nice....More

The cheapest one I could find was 2500 Yen (~22 dollars) but it was small. They can get very expensive (25000 Yen for example, ~222 dollars) depending and the size and kind of knife you want to get.

The space between the knife and the surface should be about the same thickness as 1-2 coins. This will give you the correct angle. Does that make sense?
