We were lucky to have had an authentic experience with Gabriel. What we loved was that we actually went to the market and bought the most fresh ingredients for our cooking. Not only that we learnt how to cook paella but Gabriel also showed us how to professionally cut veggies and prepare the sea food. The paella was so delicious that we couldn't resist eating more and more. If you want to prepare and cook the most authentic paella, Gabriel will surely be the right person for you. We would highly recommend to anyone this cooking experience with the real chef . Thank you Gabriel for your patient and knowledgeable session!

My daughter and I joined the Paella cooking class and it was instructive. We started off meeting at before 6 pm at the Travelers Nest bar and walked as a group to Mercado de La Boqueria where we wandered a bit and heard about the history of this open air market. We then had a 10 minute walk to a building with the kitchen where our guide/chef/teacher served all of sangria and simple tapas of peppers, cheese, different ham on bred. We then learned to prepare the ingredients such as chopped up the vegetables, how to clean and prepare squid and shrimp, how to clean mussels, clams, and to check they were still alive and safe to eat.
We then learned the proper cooking time and order of the paella ingredients, added rice, and then we learned the proper way to make sangria.
Meeting the other guests was a lot of fun and we traded traveling stories over dinner. The class essentially included enough food for dinner, probably about 3 glasses of sangria and simple tapas snacks.
Overall we had a great time, good fun, and good value for our money.

We met up with Chef Manuel at a bar in the Gothic Quarter. Our group took a short walk to La Boqueria (The Market) off of Las Ramblas. We got to see him select the freshest seafood ingredients. He gave us a little time to browse the wares of other merchants (we were able to score some Safron and Iberian jamon). Our group then took a short walk to the test kitchen in the Gothic Quarter near the plaza (town square). Each of us took part in the various steps to create the shrimp/squid/mussel paella and sangria. Chef Manuel was skilled, friendly, informative, and entertaining. Overall, it made for a nice gastronomic night in Barcelona for a very reasonable price. Chef Manuel even emailed us the recipes so we could try what we learned at home. Would highly recommend this experience.

I can’t rate this experience any lower than 1, but it was a zero. We arrived 15 minutes early for our event at the specified meeting point. Someone who worked at the Traveller’s nest bar confirmed we were in the right spot. We waited over an hour for our guide to show up and out tour to start. No one ever explained what the delay was and any time we asked where our guide was, we were told he was “running a little late”. We were offered free warm cava while we waited and we left after waiting 1 hour. Hopefully Trip Advisor/Viator does the right thing and refunds our money because this sure felt like a scam.

The paella cooking class was fantastic. We loved getting fresh fish directly from the La Boqueria market. Our chef, Gabriel, was incredibly friendly and a great guide to help us learn to cook paella. The sangria was a great touch. We went during an off time, which made it a really intimate experience with just 5 of us, plus the chef. I have heard it's great with a packed house too! Again, credit to our chef for making it an amazing experience overall!

Gabriel was an amazing host! We first went to the market for fresh seafood, then to the restaurant where he showed us how to prepare the seafood paella. Everything was explained as to how and why it is prepared, and everyone helped. The paella was amazing, highly recommend this tour when you are in Barcelona.

This was the highlight of our trip. Chef Fernando was an absolute joy - he brought energy, humor, enthusiasm, along with teaching our group everything we'd ever know to prepare paella the right way (and sangria too)! There is a bit of walking involved - we met at a common spot, walked to the market to purchase our ingredients, then to the actual cooking location. It helped that our group all spoke English, even though it was made of of people from Morocco, Germany, and the United States. It was a great way to meet other travelers as well as see other parts of the Gothic Quarter. And of course the meal was delicious! We would definitely do this again on a future visit.

This class was a ton of fun! We were provided with sangria, snacks and of course, paella. This class was “interactive”, however, it isn’t very hands-on. We were able to help with certain parts of the cooking, such as peeling shrimp and tasting the food - however, if you’re looking for a very hands-on class, this is not it. We had a lot of fun watching the chef cook, and the paella was absolutely delicious. The group is small enough that everyone can see and feels included. I definitely recommend!

Used ratchet materials to make the paella and did not let anyone else cook. Would not call it interactive in any way and the head chef appeared to be fighting with the second chef. Definitely not worth the money and not as advertised

Well, how should I put it? The paella was so mediocre, nothing special or I would eat again. But the experience was somewhat fun. The chef had a good personality, so made the experience a bit easy. The food needs much more improvement for how much it charges. This event is Purely for tourists, if you think you want to learn the real way, you would be as disappointed as me. >_<.

Unlikely, as they are providing food and drinks pre dinner at the academy. The dish they show you to cook caters for 4 plus so they will want to cover that cost minimum. Make a request when you book your wife in you never know in these times. But even observing as a spectator you will be learning stuff so you should make a contribution either way 😀
Highly recommend this event. We had a blast.

PAELLA
Recipe for 4 pax
Tools required:
Ring of fire (or it’s electric equivalent).
A flat pan (a flat frying pan but not a wok).
A wooden spatula.
Hunger and patience.
Ingredients:
200/250g Prawns/Shrimps
100/150g Clams
250g Mussels
200g Calamari rings, head and tentacles.
Olive oil.
1.5 Onions, 1 green and ½ red peppers, chopped small.
1 cup Green peas.
Parsley (don’t chop it with your knife, just irregular pieces with your hands).
Garlics (4 full pieces, just to flavour the pan with the olive oil).
2 Tomatoes, blended.
500/600g of Arborio Rice (same as Risotto, if you don’t want a mashy Paella).
½ l. Fish stock.
200cc White wine.
Warm water (enough to cover every grain of rice).
The Soul of Paella, the spicies:
2 tblsp sweet paprika,
¼ tblspsp of sea salt,
2 generous pinches of black pepper,
1 tblsp turmeric, or less. Then colour can be corrected.
3 bay leaves. Then follow the tradition and pick up who is washing dishes!
¼ g saffron.
Procedure:
Cover the bottom of the pan with olive oil, heat and slightly fry the garlics for a minute.
Add the veggies and cook them slowly until the onions appears translucent. No salt needed now. Seafood is quite salted already.
Add the calamari. Heads and tentacles first, then the rings. Contract all of them with high heat for 4 mins,
Cut parsley with your hands on top of the ingredients.
Add clams. Remember to check they should be wide open between 35/45 degrees when you eat them.
Gather all the ingredients in the middle of your pan. Do repetitive circles to share temperature and mix the ingredients.
Stop the cooking process of calamari for a while getting the cold white wine in the middle of your pan, far away from the fire. You don’t wanna burn your eye lashes with a spoiled flame!
Evaporate at least 80% of the alcohol.
Add mussels in the middle of your pan. Cold tomato sauce on top of mussels is the second cold liquid we use to cool down temperature of seafood and not overcook it!
Gather ingredients in the middle again, do the circles with wooden spoon and make a puddle adding warm water.
Proceed to incorporate and dissolve the spicies. Remember where the good quality of saffron is coming from and sprinkle some of that capsule you got in the famous Boquería’s Market!
Flavor every little small part of the pan, change the colour of all ingredients.
Add your prawns. You later decide whether to suck the head or not!
Add the rice, a handful per person, plus one for the pan (or a kilo every 10 pax), cook for a minute ensuring it doesn’t stick at the bottom with the wooden spatchulla.
Add the peas (or asparagus in the clock position to make more fancy and charming!).
Add 3.5lts of warm water and fish stock per kilo of rice. Important: the water should cover every little small grain of rice.
Terms to cook the rice:
15/18mins.
High heat for 7 mins.
Medium heat for the last 3 mins.
Always should be an empty hole in the middle of your pan in order not to burn the rice.
If you do not have the rings of fire and use normal stove: move the pan every 2 mins, North, South, East and West while you drink your homemade Sangría!
Never stir the rice, you are not cooking Risotto mate! 😉
Wait 3 more mins while you reflect on your memories on your unique trip to beautiful Barcelona, Gaudi, Parc Güell, the beach and your amazing cooking class!
Get garnish: lemon wedges, love and fresh parsley on top.
Proceed to enjoy your paella served on a plate or eating straight from the pan with a wooden spoon like the creators of this dish from Valencia’s countryside!!
If you crash out and sleep through the afternoon that’s not a “siesta”! Traditionally, the man of the house prepares a paella on Sundays for his woman and does the washing up as well! That’s why the translation for “Pa-ella” would be “for-her”.

Has anyone done this class on a Sunday? Looks like La Boqueria is closed on Sunday, and I'm wondering where the shopping for the paella takes place if the market is closed that day. Thanks!
