A number of travel agencies offer half and full-day tours to Lantau Island, which is 2 1/2 times the size of Hong Kong island.  Alternatively, you can try to handle the tour yourself on the cheap.

In addition to Disneyland and the Hong Kong Airport, Lantau has rugged mountains, beautiful bays and beaches, and traditional fishing villages.  Most tours visit Silvermine Bay or the fishing Village at Tai O by boat, then travel by bus up the steep hills to the world's largest seated outdoor Buddha.  Some offer a vegetarian lunch stop at the nearby Po Lin monastery, and a visit to nearby Ngong Ping Village.  Then you can take the spectacular Ngong Ping 360 Skyrail, a 5.7 kilometer cable car, down to its terminus in Tung Chung New Town.  From there you can return to Hong Kong or Kowloon by your tour bus or by the KCR rail.
