We usually get our Noble Coffee out of the little hole-in-the-wall under the Shakespeare Festival next to City Hall. Noble is out to educate us about coffee, so beware. They aren't willing to do anything "special" and instead refuse to make small changes to their standard fare in the name of teaching you to drink good coffee. My chai latte was very tasty, very hot, and had an awesome design on the top. My friend's espresso latte was equally well-made. You can't get a better coffee or a nicer coffee house in Ashland. It;s not only politically correct - it's delicious.

This is not a joke. It literally smells like human feces! I have been in other coffee roasting establishments that did not smell this way. Perhaps they are serving "monkey butt" coffee? It blows my mind that this place gets good reviews. They don't even serve EcoTeas Yerba Mate (A local company). Noble is Terrible.

I go to Noble for one thing: lattes to be consumed on site. The baristas are artists, pulling perfect shots, steaming milk to the precise temperature, and finishing it off with a perfect fern. This is the most delicious coffee, and i am giving it 5 stars for that. The cups are small and no refills, but still amazing.

Service is very friendly. Coffee is best in town. Tea is loose leaf. Baked goods are very tasty. Very large sitting area with good wifi. The perfect place to enjoy a great start to your day. They close at 4:00pm. I love the apricot croissants.
