  "Its hard to put into words how special this place is. My sister and I went for the May long weekend and had perfect weather and a beautiful 3 day mini vacation. My only complaint is that it was too short. The main highlight for me was the outstanding food and service of Chef Jason Folk and the kit..."chen staff. All meals were fabulous right down to the homemade desserts. Echo Valley raise their own cattle and pigs, and grow fresh veggies and herbs, so most of the food is farm fresh and as local as it gets. We also enjoyed a lovely horseback ride, incredible Thai massages (much needed after 2 hours on the horses), hikes, pool and shuffleboard, camp fire evening, and were kept company by dogs, cats, and turkeys! The owners Norm and Nan are delightful and the manager Alan is a sweetie - so attentive and kind. All the staff are lovely and do an excellent job of caring for the guests.
